Saturdays Brisket w/pics
Saturday the wife had her sisters and aunt and uncle over for dinner. She bought a 14 lb brisket from a Sysco store in Eureka. She wanted to eat at 6 so I lit the chimney at 3:30 am, had a 2/3 full charcoal basket with a hole in the center for the chimney load. Got this and the brisket in the drum a little after 4:00 and got the temp at 220, I fell asleep not to much later. Woke up at 7:00 and the temp was 200, gave it some more air and mopped the brisket temp was back at 220. At 9 the brisket was 142 and the drum 215. Jump ahead to 5:00pm the drum was 240 and the brisket hit 192, pulled and foiled.
Luckily one sister was a half hour late. I also cooked a 12" dutch oven of cornbread and a pan of 17th st. beans. I have to say I am really happy with the drum it went 13 hours on 1 load of coals, held temp well and made me look like I knew what I was doing.

Finished product
Here's the finished product......I didn't split the point and flat when carving. I don't know why the fat turned so black. It tasted great, I only used 2 chunks of mesquite early on. Used Thirdeyes rub recipe. Very little leftovers..........
