That Gyro looks great. My grandfather is from Greece, so its in my blood to love those things, and that one looks wonderful.

Suasage looks great ChefCountry, I have mine in the smoker now. I'll let you know how it turns out. Thanks for the help.

Yule Meatloaf Log

Made a Meatloaf for this TD with onions,peppers,granulted garlic,worchestishier, 1 egg and a little bread crumbs. Wrapped it in Bacon and smoked til 160 internal. It was really coldbut alot of fun to do.

Grilled Salmon Cakes

For my ground meat I thought I might try the other red meat. Salmon. I’ve had some in the freezer that I got from Restaurant Depot awhile back. It wasn’t that great so I figured I couldn’t hurt it much.

I ground the salmon on my Kitchen Aid, just one time through with the large holes.

Then I mixed in a little mayo, some chopped fresh basil, 4 green onions, and 4 tablespoons of bread crumbs. To that a little Crystal hot sauce and some EVOO. Almost forgot, a splash of Teriyaki.


This made a nice mix, so I formed it into 4 cakes and added some Planko bread crumbs on the outside. Put it into the fridge to firm them up.

Next onto the Performer over hot coals with a fish grate so they didn’t fall through. It was really dark so this pic is real bad, but I think you can see it is on the grill.

Well all I can say is that these were very tasty. Firm but not too dry, and the planko made them nice and Krispy.

Sharon, Bless her sweet little heart, had just had salmon cakes last week while we were dining out. She thought mine were the best she had ever had. In fact she asked if she could write a review for you all.

But, as always, she is busy, so you will have to just take my word for it.

It's good to be back, even if only for a short time. The remodel job is close to being finished. And at my age I hope I never have to do another. Yeah right, like this will be the last one she ever asks me to do.

Turkey Bacon Burgers

Took some ground turkey and ran bacon through the food processor. Mixed the turkey, bacon, yellow and orange sweet peppers, garlic, worstershire, onion and salt and pepperall together. Made up the patties, then off to the smoker for bout an hour and a half. Served on wheat buns with mayo and sliced avacados. As you can tell in the pics the bacon kept the turkey from being dry. They turned out really good.

I decided to try some stuffed meatloaf. I began by seasoning some hamburger with ketchup, roasted garlic, worcestershire sauce, and some foil hat rub. I also added an egg and breadcrumbs.

I lined this meat mixture in a breadpan

I then added a layer of roasted red pepper that we had in the fridge for a week (I wonder what that was used for :shock: :rolleyes:) and then a healthy layer of pulled pork:

The next was a layer of spinach with roasted garlic and mozzarella cheese:

This was topped with the ground meat mixture

and covered in tomato sauce

I smoked this on my oval for about two hours with cherry wood:
