My Sunday night smoke another attempt at a perfect brisket. With Fatties, Moinks and of course Burnt ends Cooked at 335F on UDS.

Over cook by just a bit now I got this brisket bracketed next one will be perfect!!
My biggest helper working on some Moinks
If you want to see the stoker log here it is started a hr late outside timp was -16f
Not my perfect brisket but close, got the under vs over cooked bracketed so next will be perfect
