Underground Pig (picture heavy)
I'm trying to keep the pics to a minimum, not sure if I did though. Sorry!! This is a pig I cooked this weekend during deer camp. (for a party saturday)
Had a friend dig the pit with a backhoe earlier in the week. Had company Tuesday and Wednesday, Thanksgiving dinner Thursday, then cleaned the pig Friday and started burning wood that night.... Dehaired the pig with a blow torch... Scraped and washed pig... Then put the pig on ice til needed. Started burning wood.... The burning of the wood is a party in itself. :) Seasoned the pig with dry rub, injected with beef broth/cayenne/onion/garlic... filled the inside with apples, onions, whole garlic heads and jalapenos.... wrapped pig in a layer of foil, then burlap, then chicken wire to keep it together... Used baling wire handles for easy lifting. Wet the burlap.... Placed a rack over the hot coals in the pit... Then a sheet of burnt tin. (saved tin from the last three underground cooked pigs) Covered the hole and buried it... Let the pig cook overnight.... The pig was moist and tender... I sprinkled some of the pig with dry rub and served sauces on the side... Thanks for checking out my underground pig!

Here are some of the sides...
some spicy shrimp and bacon wrapped corn... smoked tatoes and garlic bread... some meatballs in creamy gravy.... and a pot of cowboy pintos... and slaw... It was fun, There were 7 of us burning the wood and getting things ready Friday night, then about 40 for the party Saturday.

How does the coals stay lit when it is covered with dirt? Do you put pipe or something in for and exhaust stack? Sorry for being such a newb :)
