Farkin' Shiners!
I cooked up 6 racks of babys last weekend and at least 2 of them had shiner racks. Still tasted pretty damned good, tho....

Matt--shiners suck, for sure
Some slabs are just really low on meat on the bone side. Also, there seems to be 2 membranes on spares. The inner membrane is thin and almost like a clear silver skin. I try not to pull them both off if I can avoid it. If you start to pull the membrane and the meat is coming off with it--look for a second thin membrane layer. Just a thought. TIM

Shiners are areas where the butcher trimmed too close to the bone and the bone shows through. I find them on the center rack in the three-rack cryo from Sam's. Almost like they are hiding them You can see the shiners on the left end of the top rack in BYC's picture.
