Default Brown sugar in brisket rub?

Anyone add brown sugar to their brisket rub? I’ve made some great brisket with SPG, onion, celery seed, and sometimes a bit of chili powder. Just curious. Looking for some different flavors.

You definitely can. A lot of the commercial beef rubs have sugar and they work great. Doesn't take a lot though.

Worth giving it a try and see if you like it.

It burns up during a long smoke, adding some bark but no noticeable flavor to the end product.

I've done it a few times and liked it. But not in my normal rotation. Csn be nice in the bark for low and slow

I have used it and it does help with a crunchier bark, but too much of it, and it tends to burn and be a little bitter. Tried for a sweeter flavor by adding it at the wrap, but did not notice a big difference.

I don't think adds anything and you risk burning the sugar in the rub if you cook at too high of a temperature. It sounds like the rub you're using is already pretty solid for brisket, but feel free to experiment.

Always great to experiment.

Give turbinado sugar a try.

Doesn't burn up like brown & white sugar.
