Venison Beer Brats... in ball form

I wanted to make more foot long venison beer brats but ran out of time.

So I rolled the meat into balls and smoked them that way. lol

I mix my venison with pork..
added my spices in a beer slurry...

1 cup of beer
1 tsp crushed caraway seed
1 tsp allspice
1 tsp marjoram
2 tsps white pepper
2 tsp salt

let it chill overnight

smoked with a bit of hickory.

They disappeared fast but I saved a few back to have the next day with some caramelized onions and kraut.

You know how to make us all drool I would love to try those on kraut and onions. I think I am adding having one of Jeanies dinners to my bucket list
