Last week I got to judge at Smoke N' Thunder in Rome, GA. It's a KCBS contest, plus an air show and car show. Mighty impressive venue.

It hasn't rained here is a month and of course it's 40% chance on Sat.

This is looking down a taxi way with BBQ teams on the right and planes and choppers on the left.

This is Sam Grogan. His wife had passed away a few months earlier. I felt a little sad that he was now cooking by himself but thought that it was good to have him out doing what he enjoyed. Unfortunately, Sam passed away from a heart attack the next day. He will surely be missed.

Very Cool! I was bummed last week because I didn't see a report on Rome from you. I hope one of our boxes hit your table! It's funny, we saw you taking the picture of us while prepping our ribs. My father in law said, look, you just had your picture taken opening a bottle of tiger sauce. :)
 
Judge Report
Chicken – 5 entries, 1 leg and 4 thighs. Thighs were 3 bone in and 1 boneless. 4 had bite through skin and 1 did not. The leg was the big hit for me. Great color, taste, dripping with juice. The thighs were great also but not as good as the leg.


Ribs -5 entries all spares. 1 were 4 over 4 bones. 1 was 3 over 4 bones, 2 were bones all in line and one I have no idea what it was...4 bones in a frame and then some bones in the middle but a few were upside down! I hope he didn't drop the box on the way to turn in.


Most all had a deep rich mohogany color all 4 had a great taste. One had a taste that we could not agree on what it was. Most of us didn't like it.


Pork - 5 entries. 4 had money muscle with either pulled or meat from under the bone. 2 of the MM's were mushy. None of them really tasted like pork. Table was disappointed.


Brisket - 5 entries. All were slices and 1 had burnt ends. 4 were very tender and 1 was not. Only one tasted like beef and scored well.


This is like my 4th or 5th judges report and I'm seeing some trends. I'll wait until the end of the season and will write a post on just "what goes on in the tent" LOL

Sorry about taking so long on the post. Work has been kicking my butt and we also had this little 2 meat contest to run on Sunday at the Marietta square.

And we'll keep your little secret about the t**** sauce just between us. :wink:
 
The pictures of the teams were great! Cool to see the other side of the country. Seems like most of the teams in CA have the walls up on their canopies for prep and I didn't see many walls up in your pictures. Are walls (secrecy) a west coast thing?
 
Meatinc, there aren't many teams on the east coast who put sides on Their tents. I personally have the feeling that I could show or give you all of my ingredients, but you would never be able to get it exactly like me. I actually enjoy talking to other teams about what I do to try and help them, and hope they can give me some tips too!

You're welcome. I really enjoy taking them. As for Cleveland...it's on my list!
