Default Monday Night Nachos on the High Plains (w/Pr0n)

Thanks to Vicdog and the recent Brethren Trade Round, I received a sampler pack of Emporium Taco Seasoning. I left work with a hankering for Mexican cuisine. CINCHOUSE agreed. I hit La Espiga De Oro (local Mexi-mart... is that a thing?) for some supplies.



Whipped up some frijoles with New Mexico and Ancho Chili Powders, Garlic, and Sharp Cheddar + Monterey Jack cheeses.

Started building the nachos, leaving some "undressed" for the munchkin.



Good layer of quesadilla cheese and into the broiler for a few minutes



CINCHOUSE made homemade guacamole (oh day-um!), and I added some additional veg + cilantro



Yep. That'll "eat right where you hold it!"



Thanks, Vic! Have some leftover meat that'll go great in a burrito or quesadilla or some eggs later in the week. That spice mix is killer!
