Cool Sausage, Trout & a smoke kinda Friday (pic heavy)

Hey Everyone. Have some orders for some breakfast sausages coming up so I thought I'd dig up the recipe I had and give it a trial run, as well as to give out a couple testers to clients. I also did some hot Italian links. Had a couple friends over to help out so I had semi-cured a trout fillet, I rubbed it liberally..... earlier with salt, brown sugar, black pepper, a touch of pimento, garlic powder and a dash on my rub for about 4 hours and threw it on the smoker along with the tester sausages and some lychee wood, we literally just stood there, chatted chit and ate right off the grill . Best trout I've had to date. Also I'm really loving this lychee wood! Great smoke flavor. Sweet & nutty with a great aroma. Well we finished out the night on the roof with a rum and a stogie (a NUBby one ) at about 2:30. Was a great evening, just thought I'd share.

The bigger ones are the Italian.

Hey Bluetang, I simply meant it was cured for a short time & not fully cured.

No, didn't have sheep casings. I used the collagen ones. They work pretty well.

looks awsome, Iv got about 50lbs of deer meet to make into spicy deer brats, and spicy summer sausage for my brother in law, im so ready for some fresh summer sausage, and hopefully I get my deer in the moring so I can make my own supply
