It was just a simple 1/2 pound of pepper jack shredded to 1/4 pound of dice jalapenos. I used a 3lb Jimmy Dean i unrolled, then added spices, mixed it together and rolled it flat. I had to try it out on the FEC since i modded the unit with my polished alumn smoke stack. Tomorrows fatty will contain:

Diced potatoes, fried with bell peppers, onions, bacon, jalapenos, cheese, tomatoes and green chile verde, rolled into a fatty and smoked for 3 hours. 1.5 hrs @ 180 with Maple pellets and 1.5 hrs at 275F with hickory.
