I found a cryovaced corned beef in the freezer from last St Paddy's Day. If I smoke it, I'll get pastrami?

Well, it will be close to pastrami. True pastrami is a slightly different process, but it's close enough.

Brother Thirdeye has some great info on making pastrami...

Thanks Ron (&ThirdEye). That's some good info there.

I had no idea you needed to soak it in water first. I would've just thrown it on the UDS and ended up with a salty mess. Nor had I thought about a glaze.
