In the past I tried to stack a two charcoal brinkman water smoker barrels but could not get to temp. After building two 55 gal UDS smokers I ponder. Would the two barrels stack on an 18.5 weber kettle bottom and use the other side for the top? I cut out the rim the barrel attached to the old bottom that housed the electric element and this allows the 2 smoker barrels to connect.
Instead of being open on the bottom as the old charcoal smoker was do you think this closed system would get to temp with a larger fire basket inside? Will a brinkman smoker fit on an 18.5 inch weber and seal well enough or does someone have a better idea? I would like to hang my competition ribs in the upper barrel of this smoker. Has anyone had experience smoking ribs by hanging them?
