Default Onion Bombs

My daughter saw these somewhere and I thought they sounded yummy.
I was right:). I don't remember ever seeing them on here before so I thought I would share.

Started with a turkey meatloaf type mix. Eggs, bread crumbs, diced onions, salt, pepper
& a little fennel seed. Of course it could be done with what ever meat you like. I try to go with
something a little healthy when I can.


Squished two pieces of white onion around the meatballs.
I wanted bermuda's but the market didn't have any.

Wrapped in foil with a little home made rub


Onto the grill @ 350




I think the more caramelized one was right under the stack.
It was the best one. The more caramelized you can get the onion
without over cooking the meat the better they will be.

I had two thoughts after dinner.

The 1st was maybe I would try 2 layers of onion next time.
and the second was maybe a little (VERY LITTLE) bit of sugar in the rub.

The sugar thought came to me because I usually put a little
in my onions when making caramelized onions for bbq chix pizza.
