I'm in the market for a good carving knife for all the goodies I pull off the smoker. Any suggestions?

Me too. Victorinox 12 is a great knife. Ive found is a wall mount magnetic knife rack to be a great option for storage. Holds multiple knives of almost any length safely and securely.
 
I like Victorionox. A Brethren- Slamdunkpro in Sales and Ventures sells one that is excellent also
 
I have one and it is great. What do you use to store it?


For my 14 inch slicing knife I have one similar to this:

It just a plastic sleeve that your knife slides into.

For all my other shorter knives I use these:

They work great and have different sizes.
 
Just don't get a serrated blade knife unless you want a throw-away. They are next to impossible to sharpen when they get dull. Not impossible, just that they require special equipment to sharpen correctly. YMMV
 
My next purchase will be a full-fledged deli-slicer. My wife keeps telling me to add one thing at a time, so maybe in a few months that'll be on my list. :-D
 
I vaguely remember this being pretty sharp

Depending on how far you want to go, you could do a search on here. There was a thread not to long ago, lots of input on everything available from 10 bucks to hundred+. I happen to use Forschners (now Victronix) that I've had since my chefing days. I've had most of them 30+ years and have been quite happy with them.
