Default (Leftover) Prime Rib, it's what's for breakfast...

Didn't get enough last night, decided to try some for breakfast this morning.



Cut up some fingerling potatoes, fried them up with some shallot.



A quick sear on both sides...



Serve 'em up with some cheesey scrambled eggs...
