Default Cook while seasoning

Just got a new BWS Fatboy and was wondering if after the intial burn off if after I apply the oil to the inside if I can cook on it or should I bring it up to about 350 to set the oil?

After initial burn off, I oiled, and cooked a fatty at 370 - 375.

No doubt cook a fatty and add seasoning while you do so
