new vision pro smoker and first brisket
This is my first try at a brisket, its a 6# trimmed flat. Started by getting it ready to go with some pecan chunks
I used a large pizza stone on the bottom grill The top rack sits on top of the pizza stone, it only has legs on half the rack so to keep it stable I used a piece of wire to hold one side down. time to put the brisket on, I seasoned with uncle chris steak seasoning and black pepper over night. set the temp right about 275 and away we go |

thanks 3 hours in meat temp is about 160
