Default Corn Bread Pulled Pork Pie

I made up a pulled pork pie for dinner tonight with yesterdays leftovers. Based it on some other posts here with some mods I am sure others have done. Used a cast iron skillet and heated it up and greased it with butter. Pressed some cornbread into the bottom for a crust. Added a layer of baked beans, a layer of pork, some BBQ sauce, and topped with a cheddar/montery jack mix. Will definitely make this again...

Also made some pulled pork nachos which came out pretty good as well...

Thanks all... When I was thinking of how to put this together, I wasn't sure how the cheese would go with the flavor mix. So I asked my wife what she thought. I think her exact words were, "are you crazy, cheese makes everything better, go for it"....and so the story behind the story!

Not too shabby. Not too shabby t'all. I'd definitely hit that! Gotta ask though, is that sweet cornbread? I never make sweet but for that combination, I think it really would work.

Thank Deguerre. It Jiffy cornbread mix that my wife adds creamed corn to. Not overly sweet but has a nice sweetness to it.
