Default Cutting ribeyes from prime rib roasts

Every year when prime rib roasts go on sale we buy some and cut our own ribeye steaks for use for the next year. This year so far we picked up two 17 lb roasts for 5.99 per lb.




Unwrapped:




I start by trimming then sawing through on each side of the ribs. This makes alternating bone-inn and boneless steaks.



Then cut the rest of the way through with a knife




We got 29 steaks out of these two roasts. They will be individually vacuum sealed and frozen.



I used to be able to eat a full steak by myself but any more my wife and I share one and have leftovers.

We will pick up another roast while they are on sale because we do one almost every weekend of the year and will use over 40 steaks usually done smoked and reverse seared.

Besides my wife who does the vacuum packaging we had help from Jazpar on taste testing and scrap cleanup.

I just did the same thing with some roasts my grocer was selling at $5.99 a pound.

Beats the heck out of 10 to 12 dollar per pound ribeyes doesn't it.
