BBQ Sauce
New here and didn't see a search function, so forgive the question that I'm sure has been asked hundreds of times! Doing a butt Wednesday and just looking for a new sauce. Have an ok one, but I know there's something better out there! So who has a great sauce for a butt?

The search function at the bottom of the page is site specific. The first 3 or 4 results are general internet stuff but everything after that they are from posts on this forum.
Spicy Apple Barbecue Sauce 1 bottle (14 oz) ketchup 1 c. apple cider 2 tbs worcestershire sauce 1 tbs molasses 1 tbs. cider vinegar 1 tbs soy sauce 1/2 tsp. liquid smoke 1 1/2 tbs dark brown sugar 1 tbs granulated sugar 1 tsp cayenne pepper 1/2 tsp freshly ground black pepper 1/2 tsp celery seed 1/2 tsp ground cinnamon 1/8 tsp ground cloves Combine all the ingredients in a large, heavy, stainless steel saucepan and stir to mix. Bring the sauce to a boil over medium heat. Reduce the heat to low and gently simmer the sauce, uncovered for 30 minutes. Stir often to avoid scorching. Shark Attack Sauce

Blues Hog Tennessee Red if you can get it by Saturday. Makes a great finishing sauce.
Or make your own kind of Carolina pepper sauce.

What do you prefer for saucing your pork? That is a broad question.
Bob's Sort of Vinegar Sauce: 3 cups cider vinegar 1/8 cup syrup (corn syrup, agave syrup) 1/8 cup apple juice 3 tablespoons of rub hot sauce or pepper flakes to taste Heat everything up until the rub incorporates. Check for salt, add if needed, adjust heat with peppers. Cool and serve in shaker bottles like hot sauce. Landarc's GCS sauce (generic Carolina sauce) 1 cup BBQ sauce, I use Big Butz Regular or Cranberry, or Sweet Baby Rays 2 tablespoons yellow mustard 4 tablespoons ketchup 1 teaspoon hot sauce 1 tablespoon BBQ rub 1/2 cup cider vinegar Heat all ingredients to combine and dissolve rub. I use this like a dipping sauce, and for dressing a sandwich

Okay, here is another one, it requires either some planning, or some cook day coordination. I do neither well, but, I can pull this off.
Landarc's Go To, Thrown Together, Sauce: 1/2 cup frozen peach, cherry or mango juice concentrate 3 cups cider vinegar 1/8 cup molasses 1/8 cup ketchup 3 tablespoons BBQ rub 1 tablespoon fish sauce or Worcestershire sauce 1 teaspoon hot sauce Heat everything up until rub melts and ingredients are combined. You may need to add vinegar to balance sweetness. Then... 1/4 pound of barky smoked meat (I use the trim off of brisket or pork cooks, or the small useless ribs off a rack). This needs to be steeped into the sauce at some point. I do this during the rest of the meat if I have none frozen. This is served hot either on the meat, for dipping or over a sandwich.

Should have specified. Looking for more of a vinegar based finishing sauce.
May have to give the Shack attack a try as well though. |
