Competition Brisket turn in.
Just wondering if anyone sauces their brisket for turn in? Seems like it may not only add flavor but keep it from looking dried out. Is this a silly question or what? thanks

Sauce or glaze, yes. Something to give it a lil shine at least!

do you cut any extra fat cap prior to turnin or do you leave it alone?
