Most of you probably already know this technique, but I didn't learn about it until a couple years ago. It's especially great for carving the breast and makes for a wonderful presentation. Good luck and Happy Thanksgiving!

One thing she left out (or maybe I missed it?) is that before you do anything, get the wishbone out of there. It will prevent you from slicing the breast off nicely. Slicing the breast off of the turkey is definitely the only way to fly.

I've been carving turkeys pretty much like what she showed for years now...after I helped out frying 28 turkeys for a company feast. I carved 13 turkeys that night, so after that I pretty much had it down!
