I have cursed many Californian imports that have made their way to Texas (HOV lanes, Smoking bans even on patios, Kardashians), but there is no denying the greatness of the Tri-Tip. I have cooked it many times for family and friends with great success. Tonight it played an integral part in what is most likely the greatest steak sandwich ever made.

Seasoned with salt, pepper ,garlic, oregano, Hungarian half sharp paprika slurry.

Sautéed onion, red and Anaheim peppers, mushrooms, tomatoes, basil and chianti

Sandwich constructed on toasted Ciabatta. Toppped with Swiss and Gruyere

Served with tortilla chips, very spicy avacodo and tomatillo salsa, a pickle and a good dark beer.

nice sammie. yep, tri tip used to be cheap here until they started exporting it.
we got gun control in case you need some of that. we got earthquakes we could send yer way. we will keep the rain though.

TX could use some rain, wherever they can get it! Remember, tri tip and a bunch of other goodies come from cattle, cattle come from ranches and ranches without rain AIN'T! Oh yea, I got gun control too, can hit pretty much anything I aim to.

Thanks for the positive feedback. Looking at some of the other pron my food photography has a lot of room for improvement. I blame some of the lack of photo quality on the house full of compact flourecents (probably from California) my wife has installed.
