Default BackYard Smoky Rib Adventure.....or.....



the journey to back yard bliss.....the peace of the morning awakenings....
birds a'chirping, sounds of farmers cranking tractors and trucks in the not too far distance come creeping lazily over the still, cool carolina morning air as the smell of my burning pit wafts slowly upwards towards the heavens in no particular hurry,.....these are the moments I live for....that and the barbecue, I mean, come on now.....what's better than some succulent poke ribs that have been tenderly and painstakingly loved with home made concoctions of fine spices and herbs then smoked to perfection over live coal fires and wood in a hand built pit?!?!?.... sit a spell with me, won't you?...

letting the coals burn down a bit and the smoke to turn blue...



I could sit and watch this all day,.......in fact, I did!!!!! Delightful!!!



more sitting and watching after the meat was on...I'm using red oak and a little black cherry....



all of a sudden, in the middle of my quiet and peace filled journey
to smoky goodness, all kinds of heck breaks loose right at the tree line....
this little feller sounded like he brought a chainsaw with him.....he was
tearing up that tree branch for all he was worth!!!!



which caught the attention of this here feller.....



I'm betting on the bird....he's packing heat....

meanwhile, three hours into the cook........



tell of the tape 4.75 hours total cook time @275*.
resting for a bit...




and then, wait for it, hide the wimmen and chitlins.....
that first taste of pit hot, poke meat, an explosion of juicy, flavorful, bite off the bone perfection....smoky rib nirvana achieved......

All looks and sounds great, the drum is wild but I really liked the mod on the weber, how does it cook?

Looks to me like you ere havin' a good time N8. Ribs look good too.

Reckon now that it's snowin' in these parts I need to pick me up some BBQ meat and spend a day with the pit, with there not bein' much else to do and all.
