I have read that Aaron Franklin uses 16-mesh pepper. Does anyone know where to get it?

He also said that he doesn't use fresh ground pepper. He thinks it is too strong.

when in doubt always check Amazon

You can check amazon for 16 mesh ground pepper, or look for Cafe Ground Black Pepper.

Grind your own (set your grinder on the coarse setting) and leave it to mellow as long as you want. I read the same thing in his book, but buying pre-ground pepper just looks like it'd be easy to adulterate (add some kind of extender). Just like buying ground saffron instead of threads.

16 mesh pepper is so much nicer than course ground out of your grinder. I tried lots of different ways to get a good consistent grind for brisket and pepper bacon, but in the end I really prefer it prestrained to the size I want in bulk bags ready to go.

^^^^agreed. I went and bought a nice expensive grinder and still it's not %100 consistent.

Fresh ground "too strong"? That's unpossible with a decent grinder.

And, there's something about all like-size pepper pieces that irritates me

It seems to me that different brands are actually different, like coarse in 1 brand will be like cracked in another, if you can eyeball it first in a store, restaurant grind is what I would guess to be closer to what your looking for

I use Kirkland at Costco. I don't have a clue as to the grind. It is in a clear plastic container so you can see if that's what you want before you buy.

I found a very coarse pepper at Resturant Depot. Didn't say what the grind was but it is very coarse. It was $49 for the large 5 Lbs plastic jug. Worked great for the "Frank-a-Lillian" rib rub.

Funny you should ask... I just bought 3 lbs the other day from these guys. Best price I could find.. Shipping is a little pricey so I guess its a wash..

It may seem a little pricey for a single pound, but if you start getting up into the 5 pound increments like some others suggested with the Tones jug the stuff you found comes out cheaper, especially with the 10% discount you get once you hit five pounds.

It looks like their shipping price jumps when you go from 1 to 2 pounds but then doesn't jump again until you hit 9 pounds.
