I know when canning you can go with a regular canning setup or a pressure canner. Could sous vide be used for canning or would it end up creating bottles teeming with bad bacteria?

I do a lot of canning, both pressure and water bath. I wouldn't use my sous vide. It wouldn't work for pressure canning and water bath canners are cheap.

For water bath canning, you would need to use a container that will hold your jars off the bottom (use a rack) and also be deep enough to cover the tops of the canning jars with at least 1 inch of water.
I haven't checked my sous vide but you would need to keep the water temperature at at least 212F (boiling) for the required amount of time. Depending on the item being canned and your altitude.

Water bath canners are around 20 bucks, I can process 7 quarts at a time.

I was asking as I have a regular steam canning setup but could fit more into the SV tub. Guess I'll stick with the pot and rack.
