I don't get to do briskets very often, but I picked up a decent looking 13 pound CAB choice for $2.99 a pound. That is pretty good for this area. Trimmed and salted it Sunday night, then Monday morning hit it with some Black Ops and some black pepper and on to the WSM it went. I thought the flavor was spot on, and it was quite juicy.

Looks really nice! I see foil...did you crutch it or just rest in foil when you pulled it? I ask because the bark looks great!
