Default Speed of cooking in Drum Smoker vs Offset Smoker

Trying to understand the science of how people cook briskets on a drum smoker in 5 hours- I see a lot of people saying they do this.


Question: If I cook 2 identical briskets, one in an offset at 300F and the other in a drum smoker at 300F would you expect them to be finished at the same time?

Why? / Why not?

Be Pretty Close if Grate Temp is the same, some Smoker depending on thermometer placement you ain't cooking at temp it reads..........
I knock out Briskets Pretty regularly in 6 Hours in Any Cooker.......

Foil after 2 hours or so is the key.

To answer your question: based on my experiences 30-45 mins faster on a drum.

Direct heat should cook a little faster. At least that's what i always assumed.

Here's a guess as to a little science behind why there might be a difference. A drum, especially when the stack is at the opposite side of the barrel from the air intake at the bottom, is more likely to get a cyclonic convection current going, which will, as anybody who's compared a convection oven to a regular oven can attest, lead to a faster cook.

Just a random thought, so feel free to tear it apart.
