Default Dinner Do-over

Having had the original dinner plans thwarted by bad dry aging, I'm starting over.

Ran to the store and found these sweet Prime Ribeye Cap Steaks.

Dinner is saved.

Plan:
Coat in a mixture of roasted bone marrow and roasted garlic w/ S&P
Sous Vide to 130°
Sear over vortex.
Serve over a board sauce.

Serve with potato roses, Brussels sprouts, roasted mushrooms.
Appetizer - ginger scallops
Dessert - Bread pudding w/ Vanilla Bean Moonshine sauce.

Clockwise from top left:
Brussels Sprouts salad and cut steak
Lemon Basil Smash made with Maker's Mark mint julep
Potato Roses
2 of the steaks on the board sauce
Roasted mushrooms, leeks, onions, shallots, and pecans

Forgot to take a picture of the bread pudding.
I'll do that in the morning.

Also had:
2006 Silver Oak
2015 Caymus.

Wow. "Our Fathers" who were in heaven, for an evening, at least....

Mint Juleps with lemon basil smash? Uhm.... yeah... Sign me up!

Need some direction / thoughts on those potato roses (I'm sure it's simple.. I'm just not that bright).

You folks ate incredibly well. Thanks for sharing the evening with us!
