Default First cook on new Superior SS-3

Had my first cook on new SS-3 since upgrading from Primo. Did some full spares and squared them off. I went with the 3-2-1 method and they were delicious. However, they were more fall off the bone then I like. Had guru set at 225 and the superior was incredibly easy to cook on and maintain.

The insulated vertical seems to cook faster than Komodo style cooker??

Would love to hear from others if that is true.

Doing shoulder next, will post some pix next time!

I had a similar experience with my first slab of ribs on my Assassin Smoker. They were too fall off the bone after wrapping them for 2 hours. I think that the next time I will cut it back to just a hour in the foil and then a hour unwrapped. I have heard that the gravity cookers like ours do cook a little faster.

Yep! Thinking same as you...less time in foil and maybe 30 min less pre foil. Thanks for feedback

I haven't done the 2 hour wrap on any of my smokers for years. Only do 1. I plan to do the same on the 28. I normally am 3-1-1 or 2-1-1 at 275. Comes out great for me.
