Default Spareribs...Pork Butt...With Pron

Doing another smoke on my UDS that I built a couple weeks ago. This is my 3rd cook. So far I have only done ribs (babyback, and spares), pork butt, and chicken. Anyways through on 3 racks of spares, and a 3lb baby pork butt....at least that's what I thought it was. It was tied up and when I cut off the netting it kind of fell apart so not sure how its going to turn out. We'll see. So here is some pics so far.

Good looking grub!!! Looks like you had a small bonless pork butt... Nothing wrong with it, I do them up myself from time to time....

Thanks....it was a boneless pork butt. It was all they had at the store today so I figured why not give it a shot. Here is a pic of the ribs after 5 hours on the smoker. Just about done. Just put a light glaze of sauce on them and will pull them off in another 30 minutes or so.

Those look really good. I may have to rethink building a UDS.
