I have an Alto Shaam that holds 12 Full (4") Hotel Pans. I'm wondering how many St. Louis Style racks of ribs would fill 1 pan. Any help?

depends on how deep the hotel pan is and the size of the ribs you buy.

in a 2-1/2" pan I can fit 4 racks of Baby Backs when cut into individual pieces. As whole racks the racks will be slightly over the edges.

I'd agree maybe 4 racks in a 2 1/2" regular pan or in a deep foil pan like Sam's Club sells 6 racks comfortably.

I get 4 full racks in & if needed I can lay a 5th on top, covered with foil & put in a cambro
