Default U.S. of Bacon inspired heart attack.

The last episode of United States of Bacon featured a restaurant somewhere doing stuffed chicken breast wrapped in bacon. They used a ladle to wrap the breast with bacon. Wifey saw this and decided we must try it. We put bacon bits of my home cured bacon along with a few different smoked cheeses I did recently in the breast. Right now I have them in the kettle getting some cherry smoke.

WARNING: do not scroll down if you count calories!

More to come......

Looking good! You are just observing a grand old Virginia tradition!

A Poetical Picture of America

Arising from a general intercourse from that Country, from the year 1799 to 1807.

It's bacon, bacon, is their fare;
They'd sooner choose to live on air,
Than too much fresh, or too much fish,
For bacon's the Virginian's dish.

I'll have 1 of those and 2 Aspirins (just in case). I love the shot with the cheese ooozing out.
