Look at Backwoods Piglet Plus. They are in Shreveport which is not far from you. Several catering guys and a couple of small restaurants running them around here. 1 shelf will hold eight 8-9lb pork butts. Has dual exhaust drafts so it pulls air from both sides of the cooker for even cooking, expanded metal shelves, stainless doors, commercial fire box. About 500 lbs so heavy but not too bad for a cooker with that capacity. They are priced between $4.5k and $5.2k depending on the set up.
