So many ribs, so little time... Don't you love having ready sources of smoke wood in your yard? I've got apple, cherry, oak, and maple. Probably some others as well that I haven't thought of using...

How soon after trimming that peach tree were you able to use the wood ? - got a guy bringing me a branch of peach tomorrow, and was curious how long I might have to keep it before it was good smoke. Have some cherry that wasn't much good for smoking till the 3rd summer, hoping for a quicker use for the peach.
Oh yeah, by the way, delicious looking ribs!

the trimmings were about 4" long & 1- 1 & 1/2" in diameter so i just let 'em preburn a bit in a chimney over a couple chunks of lump then threw 'em in. it was already pretty dry- used it w/in minutes of cutting.

zydeco- i have loads of sugar maple(soon to be homemade lump),hickory,2 kinds of apple,peach,pear,beech,persimmon,& oak. i already cut down the cherry tree....
