Cooking for our Class Reunion

I was given the distinct honor of cooking Pork Loins & Baked Beans for our HS class reunion last Saturday. We had a total of 132 guests. We over bought the loins by a lot (116 lbs.) but we wanted to make sure everyone had plenty to eat. I also made five #10 cans of baked beans. They're not in the pic but they filled 7 half pans and they all fit on the top rack of the cooker. We trimmed most of the fat cap off the loins and cut them in half to make them more manageable. We probably had 1/3 of the pork loin left over. Most of the beans were gone. We also had a few other sides catered and had a lot of them left over as well. All the left overs went to the Gospel Mission. You should have seen the looks on their faces when we opened the cooler full of Pork Loin. That in itself was enough reward. I received many, many compliments on taste, moistness and tenderness. I cooked them to ~140F internal temp, wrapped in foil and held in pre-warmed coolers. Thanks!! It was still a figment of my imagination at the La Platte Comp last year. I designed it last winter & had a local welding shop build it this spring. They did an awesome job!!! Cheers!!
