Default 5lb Brisket smoking around 32F outside on a Webber Kettle help

Hi guys, been a while since i have been on here. Need a few tips. I have a 5 lb brisket i want to smoke tomorrow. Its 32-36F here in Toronto right now. I have a smokenator and normally she holds 250 real good.

Last time ( 1st time ) I did the wrap n a cooler thing. Ths tim I want a nice black bark. Should I; A, inject it? Has a nice fat cap on it. B, just leave it on the smoker for 5-7hrs low n slow and spray it now n then?

I just inject with a good beef broth, use your favorite beef rub or just salt and pepper. Leave it till you get your bark you want maybe it will even be done by then if not foil it and cook more, if it is pull it foil it then put it in a cooler for a few hrs

THX! should i put the rub on and inject it now before bed, or just take it out of the fridge tomorrow and do it?

injecting or spraying will not help you with bark. They both actually hurt bark more than help (Moisture kills bark). It does not matter if you rub it tonight or tomorrow as far as bark goes. If you want the best bark, rub it and smoke it naked (no wrap, no injection, no spray). if you want something else, wrapping, injecting, and spraying can help but if you want bark above all else, don't wrap, inject, or spray.

tHX! OK, im going Naked. I only have a flat though and was worried about getting to dry. I saw a No Reservations epiode where they went to a place in Austin. Just salt, Pepper, and Oak. Amazing bark.

I would inject for flavor and rub...wrap and refrig overnite. Bring the smoker up to temp...take out of refrig and rub again...put on and cook to temp.JMO.
