cooking capacity on a 120 gallon horizontal offset?

I do a big (well, big for me) BBQ every summer where I serve somewhere around 100-120 people. Right now I'm building a horizontal offset smoker which uses a 24x70" horizontal tank as its cooker. It will have 2 racks spaced 6" apart. I'm wondering how many racks of St. Louis cut spareribs I can cook at one time with this cooker. I'm willing to make/buy any rib racks necessary, but I want to figure out how to really fill 'er up. We want to feed more people, and the ribs are the limiting factor.

Hey SPB.. I just finished a 120gal build, and I figure with the 2 shelves you can probably hold about 18 or so racks. the thing is though, you can probably insert extra shelves to hold more racks as ribs don't take up too much vertical height. Just a thought. You can check my sig for the build. I'm figuring its the same size.
