Default Practice Chicken

I did a practice competition chicken cook yesterday. The chicken thighs turned out fantastic, however I would have liked a little more color!

BTW, check out the bite through skin in the last pic!!!

looks real good and I like the tooth pic idea does that keep the skin from pulling back?

Wow. That put the "B" in bite through chicken. I bet you couldn't even tell the skin was there......I'm guessing that was skin up while in the pan, could you give us a guesstimate on the temps and times? I'm thinking one or two more test cooks for me and I'll have a good handle on this method.

Thanks TE! I did not simmer in sauce as I have in the past. I cooked these indirect at 250* for 3 hours and sauced for 30 minutes at the end. I basted every 3 minutes.

I will be doing 2 more test cooks using this method, next weekend and the following weekend. Then I will see how this does in the first comp of the year in Salisbury, Maryland.
