Talking Smoked Chicken Noodle and Potato Soup!

I had bookmarked N8man's post from 2009 and FINALLY got a chance to replicate it.

I am so glad I did!

So, we had a beautiful day in the city and that led to an early smoke!

Got the yard bird going seasoned only with Todd's Dirt, burning lump and some Maple from the backyard.



Step 2, in a bath with celery, peppers, onions, Todd's Dirt seasoning and kosher salt.



Got that simmering for a couple of hours. Then strained via cheesecloth-colander mod, separated the good from the bad, let the broth cool a bit and skimmed off the excess fat.

All back in for another rapid boil and introduced, sweet and regular potato, onions and carrots. All the while my daughter made some Garlic Bread with Mozzarella Cheese!



And noodles at the very end...delish!
