Default Conch Chowder

A little bit of comfort food.
I picked up some conch meat awhile back https://www.bbq-brethren.com/forum/s...d.php?t=265773 and made a batch of chowder.

This time I chopped the conch meat and used the instant pot. Added water to cover and let er go for about 50 minutes.

I like cream based chowder better than tomato based, so I went with my usual Bacon, Tatoe Corn chowder recipe.

Browned the bacon til crisp...

added butter to the bacon drippings, sauteed onions, scallions garlic...

added half and half and conch broth from the instant pot..

cooked, cubed tatoes...

creamed corn and the tender conch meat...

adjusted seasonings and added crisp bacon more scallions and called er good.

I really liked the way it turned out. The instant pot made the conch so tender. It reminds me of clam meat.
Will be making this again in the future.

Thanks for looking!
