Pulled pork sauce recipe

I don't want anyone's secret recipe, maybe just some guidance. Looking to do my 1st smoked pork butt next week. I know it shouldn't be overpowering but have never made a homemade BBQ sauce before. Don't think I want to used bottled after smoking the butt myself.

We do something that's a little more like an aus jus to toss it in than a thick sauce.

Cup of apple juice, 1/2C Brown Sugar, 1/4C Soy, 1/4C olive oil, some white wine vinegar, some diced or chrushed chipotles and some minced garlic. Boil that up for a while then strain. Then we take the juice left in the pan after we've pulled the butt and chill that quickly. Skim off the fat and pour the pork juice into the sauce. Mix and then toss it all over the pulled pork and toss to coat.
 
Not afraid to give you one of my secret recipes, this goes really good with butt.

1/4 cup water
1/4 cup cider vinegar
1/4 cup catsup
1/4 cup yellow mustard
2 TB whatsthisheresauce
1 TB mild molasses
1 TB sweet sorghum
1 TB brown sugar
1 tsp allspice
1 tsp onion powder
12 (or so) dashes Paul Prudhomme Magic Pepper Sauce

Simmer it all together until you get the consistency that looks right to you, cool, serve.
 
I'll take anyone's secret recipe if they want to share it.

I'll share my favorite since I found it online somewhere anyway. It's called Savory Rib Sauce but I like it much better in pulled pork.

* 2/3 cup chicken stock
* 1/3 cup brown sugar
* 1/4 cup cider vinegar
* 1/4 cup ketchup
* 5 cloves garlic
* 3 tablespoons olive oil
* 3 tablespoons yellow mustard
* 2 tablespoons soy sauce
* 1 teaspoon cayenne (more to taste)

PREPARATION:
Pour olive oil in a sauce pan over medium heat. Add minced garlic and simmer until lightly brown. Add remaining ingredients and mix well. Simmer on low until it starts to thicken, about 15 minutes. Allow to cool. Store in an airtight container in the refrigerator.
 
If you prefer a thin red sauce, this has been my favorite lately. Not mine, I'm sure. Just one in my files that I like.

Tennessee-Style red sauce Updated 8/31/2008

24 ounce bottle Hunt's ketchup
1 15-ounce can tomato sauce
2 cups packed brown sugar
1 cup cider vinegar
2 tablespoons Worcestershire sauce.
2 tablespoons cracked black pepper
2 tablespoons red pepper flakes
2 tablespoons paprika
2 teaspoons onion powder
2 teaspoons dry mustard
4 teaspoons red pepper sauce

Combine all the ingredients in a small saucepan. Cook and stir over low heat until the sugar melts and the ingredients are blended. Lower the heat and simmer about 10 minutes. Makes about 3 pints..

Blues Hog Tennessee Red for pulled pork gets my vote.
 
I like thinner sauce for PP so if I don't have time to make my own, I start off with Open Pit Original and add vinegar and brown sugar to taste, maybe a little cayenne depending on who is eating it.

Sorry... I just noticed my name in your post. Maybe I'm missing something, but I didn't see any espresso in there, so I didn't see any crema. Did I miss it?

i will be completely honest, I didn't watch the video. I jumped to about 6:10 and stopped at about 6:30. I didn't have time to watch the whole thing.

Lexington Dip Sauce


1 & 1/2 cups catsup
1 & 1/2 cups apple cider vinegar
1/4 cup water
1 teaspoon red pepper
1/8 teaspoon red pepper flakes
1/4 teaspoon black pepper
1/4 teaspoon salt
1 teaspoon sugar

Combine into a sauce pan over low heat and
let simmer covered for an hour to allow flavors
to blend.
 
N8man has a nice looking recipe there, while I'll bet it is great as written I am a garlic and rosemary kinda guy, I might would enhance it with a little of each.
