the unwrapped one P9300840.jpg the wrapped one P9300841.jpg Unwrapped on the left. They had the same taste and texture, the wrapped one took 1 1/2 hours longer. I thought the wrapped one would be done first, and the unwrapped one would be much darker, wrong on both. By using the roaster rack I did discover one thing the grease went through the paper but the awesome juice stayed in the paper somehow, got about a 1/4 cup of thick black deliciousness.

Dang! Them butts look tasty! I wrap my butts in paper also, but I do it only to preserve color.

Thanks for the side by side!! I would have thought the wrapped 1 would have been done at least the same time the other would have been. I know it's not uncommon for 2 butts to have different cook times but I thought it would have sped it up. I wonder how long it would have taken w/o paper then?

Thanks for the write up and the idea for using a roaster rack.
Didn't think the juices would stay in the paper.....but what do I know. They both look great, good going!

It looks like only one butt had a foil pan under it. If so, the foil pan acts like a heat deflector thus adding to the cook time. For a fair comparison of times, both butts would need to have pans under them.

When I unwrapped it there was a small section in the center that still had a little resistance so it went back on for 30-45 min with the paper ripped off. That may have helped firm the bark up. I was surprised how similar they came out.

Sooooo what is your take home? They both look so dang good in the pics I'm not sure I can draw a conclusion other than maybe wrap to preserve color then unwrap for a while to firm up the bark???
