I mentioned sonething in another thread which made me want to ask this.

I dont really know much about them besides they seem to be big in Texas. Any likes or dislikes?
 
Living in Texas there are very few KCBS cook offs. IBCA is mostly what I cook.
They cook half chickens,pork spare ribs,and brisket.No garnish in the turn in container.Also no sause after the meat comes off the pit.It must be cooked on.
Entry fees are around 100/125.00.Pretty good pay back at most contests and pretty good folks.
Any questions I can answer,just holler.Been cookin em for a few years now.

I like the no garnish idea. We have one over here in southeast LA in October in a little town called Ponchatoula. Id like to try it out.
