Anyone have a larding needle? Suggestions?
I have a larding needle on the Xmas list and since there seem to be many styles and prices from $4 to $65 or so, I don't know what I should tell the wife. Does anyone use one and if so what do you like or not like about the one you use. All comments are welcome. I'm looking to add even more fat to the stuff i cook.

I am interested as well. I have seen pix of everything from just needles, to tubes with handles on the end.
I am at a loss as to how you use them. |

Well, I guess I'm in good company then. A couple of months ago I smoked a whole bone in Pork Loin. Nice piece of meat. The whole piece was a rack of baby backs, the loin, the tenderloin and another cut or two. $1.19 a pound. The whole piece was about $28. Lots of meat for not a lot of $. Anyhoo, since the different cuts have different amounts of fat and I cooked it whole, some was perfect and some was a tad dry. This was expected. I want to do this beast again and think adding some fat to the leaner cuts will balance things out and all will be tender and juicy. Hence the search for the needle. But what do I know? |

Never heard of a Larding Needle but sounds like a great way to add some flavor to things like Pork Loin...how can addng MORE fat be a bad thing!!!
I'd be interested to see any info folks may have about this Larding Needle.

Think "Injector" but larger and leaving behind fat, lard, butter, etc. If you've ever used a paring knife to cut slits in a roast and inserted garlic, herbs, etc. you could use a Larding Needle to do similar.

I inherited mine. Its about 12 inches long and I can lard anything from a pork loin to a steam ship round. Of course when I do a pork loin I need to work from both ends.
I could not recommend a brand to buy but I would not get it through Ikitchens.com I have been waiting since 25 Sept for my ET-73 and they still haven't filled the order.

The Allied Kenco catalog gives a description for its use, I doubt it it would be something I'd be interested in.

I don't know if I want a larding needle, but I do want one of these:
It would be the t1tts for lacing up turduckens and pecan stuffed rib roasts. Not to mention joining crown roasts. |
