If the ABT's are wraped in bacon, till bacon is cooked, if not just a matter of preference on tenderness. Never done candy. Fatties I like to pull at 155*, will usually rest a few minuts and they hit 160*.

Just long enough to get the bacon done. It normally takes ABTs about two hours at 250. Pig candy cooks a little quicker.
