Default HH Turkey on UDS

I am doing two 8 pound turkey breasts on the drum. I want to cook at about 325. I only have 1 rack in my drum and my charcoal basket will not support a heat diffuser. Can I just put both turkeys in foil pans to protect them from direct heat? Would that be considered indirect heat? I know it will cut down on the smokiness somewhat...

I would put them directly on the grate and keep an eye on them. I think the flavor will be better. You can put them in a pan if you think they are getting too crispy. If you, by chance, have some cheese cloth, soak it in butter and wrap the breasts with that and put a little foil under them. That will keep the butter from burning but keep an eye them. Hang a double thickness foil sheild under grate. I do turkeys that way. Just enough do deflect direct heat. Wrap around rungs on each end.
