Is it possible to do this without burning them? I am thinking of hanging a pizza pan from the bottom rack to deflect heat, but the pan is only 15 inches wide. The briskets are about 12lbs each and the butts are about 7.

put a brisket on the top and bottom rack. Then you can put a pork but on each rack also, but 2 7lbers should fit on 1 side of one of the racks if you want to do it that way.

Biggest thing is that your briskets will probably finish before your pork butts depending on what temperature you are cooking at. As long as you check on your meat from time to time, you shouldn't have to worry about burning anything.

I would not use a pan. I have a 3 rack system (lowest for a pan) and found no need to use a pan. I have fit 2 butts on one rack in the past. Not sure if you will be able to fit both briskets. Perhaps a combo of a Brisket and Butt on each rack.
If you didn't buy the meat yet bring a tape measure or cut a 22" templet from paper and bring it with you to the store.

IDK are you a Pit master? brisket on the bottom FC down Butts on top FC up

Just build ya a 2nd UDS - have a Cow Parts UDS and a Pig Parts UDS....:loco:
