Yeah, Thats what I'm worried about. I think I'm going to whip up a larger basket so I don't come short on long cooks. It was my 1st test fire so I loaded up, which added to the issue.
I'm about 3" off the bottom.
I purchased a replacement charcoal pan from academy and use it as a drip pan...I dont like the grease on charcoal flavor.But does that three-racker have a drip-pan/heat-sink or do the drippings fall into the coals witht he required distance between coals and lowest rack?

I have heard it mentioned on here before, and I was thinking of building one like this, and that is making your UDS have a large pan in the bottom to catch drippings, and maybe even act as a heat sink, eseentially making your UDS a 22.5" WSM. With this configuration, you could probably have 3 racks. How sexy would that be?
Just curious if anyone has tried it. I want to build a regular UDS, and then one of these like a WSM to see if it would work. I have sized the large charcoal pans at Ace Hardware and think they are a good match for the 22.5" drums. What say you guys? You're the UDS experts and have seen it all really.
I really will build these someday. Those who know me know that sometimes it takes a while for me to find the time to finally do some of the things on my wish list. So I'm serious about this, but don't expect me posting pics of my build this weekend ya know!
With a poorly fitting lid and a windy day how is your temp control?

Anyone ever installed a rotisserie on a UDS ? I saw a brand new one in the box the other day at goodwill for $5 .
Thought if it is there tomorrow I might offer them $3.50 and see what they say.

I was having a problem getting up to a high temp so I added them. I have three 1/2" nipples and am running them wide open. I can hold steady at 220° which is fine for most of what I want but was looking to be able to get a higher temp for other things. Might need to add another inlet?I think those extra two holes in the lid are going to give you problems.
